Esta primavera, la cocina nórdica de Noma se ‘contaminará’ en Tulum de la cocina mexicana. Será un pop up, un festival gastronómico efímero de seis semanas, entre el 12 de abril y el 28 de mayo. La elección no es al azar: durante años, Redzepi y su familia han viajado hasta Tulum y se han alojado en un hotel junto a la playa.



¿Y la cocina? Parte esencial del proyecto es Rosio Sánchez, una cocinera mexicana que, tras trabajar durante años en Noma, abrió en Copenhague las taquerías Hija de Sánchez. Algunos ejemplos del menú de 600 dólares: Maíz azul, flores, chapulnes, frutas de la región, raíces, gusanos...
